Just had a EE guy at the door saying he needs to replace the cables and wiring on my Sky box and phone as they are they are doing it because Sky no longer replace upgrade them. Sounds a bit dodgy to me..

Very suspicious.
EE is a brand within BT Group and their personnel have no business touching any Sky infrastructure.
Openreach is also part of BT Group and can be involved with Sky Broadband but not Sky satellite television cabling.
Having said that, Openreach would only attend the address if you'd reported a broadband fault or ordered a broadband upgrade from Sky.
